Meat Dishes and Sausages with Polenta and Cheese

To prepare a delicious meal that delights the taste buds, we will start with the meat preparation, followed by a perfect polenta. Browning the meat is an essential step that will bring a rich flavor to the dish. In a large skillet, we heat the lard, and when it becomes hot, we add the bacon sliced into thin pieces. The flavors will blend quickly, and the bacon will start to melt, providing a savory background. Once the bacon has started to brown, we add the pieces of meat, preferably ribs or bacon, and let them cook over the heat, stirring continuously to avoid burning. When the meat is lightly browned, we add enough water to cover everything and let the pot simmer covered on low to medium heat, stirring occasionally. After about 20 minutes, we add a few sausages cut into pieces. We continue boiling with the pot uncovered, making sure that the sauce reduces and the meat becomes almost cooked, having a lightly browned texture. If we notice that the liquid level drops too much, we add a little hot water. Towards the end of cooking, we add finely chopped onion and sliced garlic. These ingredients will add a flavorful taste to the dish. We let it simmer together for another 10 minutes, stirring more frequently. We taste and adjust with salt and pepper to our liking. While the meat is cooking, we turn our attention to the polenta. We boil diced potatoes in salted water until they become soft. After boiling, we drain them and mash them while they are still hot, obtaining a fine puree. We will keep 2-3 cups of the water in which the potatoes were boiled, as this will help us achieve the desired consistency. We put the pot with the potato puree on low heat and add the reserved water. We start to gradually add the cornmeal, constantly stirring with a rolling pin until the mixture becomes thick and no longer sticks to the rolling pin. Finally, we salt to taste and add the butter, which we incorporate well into the mixture to give it a fine texture. Serving this dish is a special moment. We spread a generous portion of polenta on the plate, add the pieces of meat and sausages on top, and then sprinkle with cheese, according to everyone's preferences. This combination of ingredients, rich in flavor and textures, promises to offer an unforgettable culinary experience, perfect for a family meal or to impress friends.
