To prepare this delicious recipe, we start with the necessary ingredients: medium potatoes (4-6 pieces), some sausages (preferably smoked for a more intense flavor), carrots (optional, but recommended for added flavor), cheese (preferably telemea or burduf cheese) and, of course, olive oil, salt, and pepper.

The first step is to peel the potatoes. Wash them well under a stream of cold water, then peel them. Once you have finished peeling, use a sharp knife to create a tunnel in each potato. It is important to ensure that this tunnel is wide enough to insert the sausages, but not so wide that the potato falls apart. An effective method is to start by making a longitudinal incision and then carefully remove the core.

After you have prepared the potatoes, it is time to cook them. You can choose to boil them in water or steam them. If you choose the steaming method, place the potatoes in a special steaming basket and place it in a pressure cooker, adding water, then close the lid. Let them boil for 10 minutes until they become soft, but not too soft. If you prefer to add carrots, you can slice them into rounds and boil them together with the potatoes.

While the potatoes and carrots are cooking, you can prepare the sausages. Take the sausages, prick them with a fork to prevent them from exploding during cooking. In a pan, add a finger of water and place the sausages. When the water decreases, add a little olive oil and fry them until they are brown and crispy, making sure to turn them occasionally to cook evenly.

Once the potatoes are ready, carefully remove them from the steam or water and let them cool slightly. Then, fill each potato with the fried sausage. You can also add a few slices of boiled carrot on top for a nice appearance and richer flavor. Finally, slice the cheese and place a slice on each potato.

Put the stuffed potatoes in a baking dish or a suitable microwave container and bake them at medium temperature or, in my case, at low power in the microwave until the cheese melts and turns golden.

This dish is served hot, alongside a fresh salad, which can include tomatoes, cucumbers, and onions, to complete and balance the flavors. Enjoy your meal!
