To create a delicious and aromatic dish, we start by preparing the ingredients. First, we take a large onion and a fresh carrot. The onion is peeled and finely chopped, while the carrot is peeled and grated or diced, depending on preference. These two vegetables will add a savory taste and a pleasant texture to our dish.

In a large pot, we heat a few tablespoons of olive oil or vegetable oil. It is important for the oil to be well heated before adding the vegetables, to sauté them evenly and intensify their flavors. Once the oil reaches the optimal temperature, we add the chopped onion and carrot, stirring constantly to prevent sticking. We let them sauté over medium heat until the onion becomes translucent and the carrot softens slightly.

After about 5-7 minutes, we add the washed rice under a stream of cold water. It is recommended to use long-grain rice, which will separate nicely and absorb the flavors from the vegetables. We mix well, so that the rice is coated with the oil and combines with the onion and carrot, allowing it to sauté for another 2-3 minutes. This step will help develop a deep flavor.

Once the rice has sautéed a little, we add 1 1/4 cups of hot water. It is essential for the water to be warm to avoid shocking the rice, allowing it to absorb the liquid gradually. We cover the pot with a lid and let everything simmer over medium heat. In about 10 minutes, we will notice small holes starting to appear on the surface of the rice, a sign that it is beginning to absorb the water.

When these holes become visible, we add the corn, which can be canned or freshly cooked. The corn will add a touch of sweetness and a crunchy note to the dish. We continue to add the rest of the water, so that the rice is completely covered. We reduce the heat to low and let everything simmer gently for about 10 minutes, or until the rice becomes soft and all the water is absorbed. Finally, we can add salt and pepper to taste, stirring gently. Our dish is now ready to serve, full of flavors and colors, a true delicacy that will delight any table.
