Parmesan chicken schnitzel

Parmesan chicken schnitzel browns in a pan in a coating of egg, flour and grated cheese. Risotto rice cooks with mushrooms and parsley on the side, while the breast slices chill for a few hours before frying. I use one large breast and cut it into slices as even in thickness as possible. Prep: 20 minutes. Cook: 35 minutes. Rest: 180 minutes. Total time: 235 minutes. Servings: 4. Approximately 1100 kcal and 54 g protein per serving.
Ingredients
For the schnitzel
- 700 g chicken breast
- 1 teaspoon salt
- 3/4 teaspoon ground white pepper
- 1/2 teaspoon garlic powder
- 30 ml olive oil
- 60 g grated Parmesan
- 80 g flour
- 2 eggs
- 100 ml frying oil
For the pilaf
- 1 small onion (100 g)
- 1 can mushrooms (200 g drained)
- 3 cups risotto rice (600 g)
- 1440 ml hot water
- 1 meat stock cube
- 30 ml olive oil
- 1 teaspoon salt
- 1/4 teaspoon ground white pepper
- 15 g fresh parsley
For the optional sauce
- 1 packet mushroom sauce
Preparation
1. Cut the breast into 4 large slices and gently pound them between two sheets of plastic wrap. Season with 1 teaspoon salt, 1/2 teaspoon white pepper and the garlic powder, then drizzle with 30 ml olive oil and grate 30 g Parmesan over the top. Cover and refrigerate for 3 hours. 2. Finely chop the onion and drain the mushrooms. Heat 30 ml olive oil in a pot and sauté them for 2 minutes. Add the rice and sauté for 1 more minute, stirring. 3. Dissolve the stock cube in 1440 ml hot water. Gradually pour the liquid over the rice as it is absorbed, stirring often for 18 minutes, until the grains are tender but still hold their shape. Season with 1 teaspoon salt and 1/4 teaspoon white pepper, then add the chopped parsley and cover the pot. 4. Beat the eggs in one dish. In another, mix the flour with 30 g grated Parmesan and 1/4 teaspoon white pepper. Coat each slice in the flour mixture, then dip it in the egg. 5. Heat the frying oil in a pan and fry the slices in batches for 3 minutes on each side, until browned and cooked through. Transfer them to paper towels. 6. If you want to serve the schnitzel with sauce, make the mushroom sauce from the packet in 2 minutes, following the instructions on the package. 7. Serve the schnitzels with rice and mushroom pilaf.
Notes
The thickness of the slices changes the frying time; if the edges are still very thick after pounding, flatten them a little more. Finely grated Parmesan mixes more easily with the flour and stays on the coating. Drain the canned mushrooms well so their liquid does not get into the pilaf. Don’t cut short the 3 hours in the fridge, the flavours have time to settle into the meat. If you use chicken stock instead of water and a stock cube, taste it before adding more salt. The schnitzels and rice keep covered in the fridge for up to 3 days. Serve with a simple green salad. For a gluten-free version, replace the flour with the same amount of rice flour; the dish also contains dairy and eggs.
Frequently asked questions
Can I use boneless chicken thighs?
Yes, if you cut them into thin slices and pound them until they are about as thick as the breast; fry them for about 4 minutes on each side.
Why does the coating come off during frying?
Meat that is too wet can make the flour slide off. Pat it dry with paper towels before coating it in flour, without rinsing raw chicken.
What should I do if the rice is still hard after it has absorbed the liquid?
Add 100 ml hot water and cook for 2 more minutes, stirring.
Can I use long-grain rice?
You can, but the pilaf will be less creamy; cook it for about 15 minutes and check the grains towards the end.
Can I use pre-grated Parmesan?
Yes. Choose finely grated Parmesan, not large flakes, so it mixes evenly with the flour.
