Who says that love doesn’t go through the stomach has never tried to make heart-shaped ravioli! This recipe is not only delicious but also turns cooking into a love-filled activity, perfect for special occasions like Valentine’s Day. You will learn how to make fresh pasta filled with a savory mixture and shape them into hearts that delight both the eyes and the taste buds.

Ingredients for the dough:
- 300 g wheat flour (preferably type 00 for a fine texture)
- 3 large eggs
- A pinch of salt
- 1 tablespoon of olive oil (optional, for extra flavor)

Ingredients for the filling:
- 200 g ricotta
- 100 g grated parmesan cheese
- 2 tablespoons of fresh chopped parsley
- Salt and pepper to taste
- 1 teaspoon of lemon zest (optional, for a fresh taste)

Ingredients for the sauce:
- 50 g butter
- 2 cloves of garlic, finely chopped
- 100 ml cooking cream
- Salt and pepper to taste
- Fresh basil leaves for garnish

Making the dough:
1. Start by sifting the flour onto a clean work surface, forming a mound with a well in the center. This will allow the eggs to be incorporated more easily.
2. Beat the eggs with a pinch of salt and pour them into the well made in the flour. Use a fork to gradually incorporate the flour into the eggs until the dough becomes smooth.
3. Knead the dough for about 10 minutes until it becomes elastic and smooth. If the dough is too sticky, add a little flour. Cover it with plastic wrap and let it rest for 30 minutes.

Making the filling:
1. In a bowl, combine the ricotta, parmesan cheese, parsley, lemon zest, salt, and pepper. Mix well until you obtain a homogeneous mixture. Taste and adjust the seasoning to your preference.

Forming the ravioli:
1. After the dough has rested, divide it into 4 pieces. Roll out each piece with a rolling pin until it becomes very thin, almost transparent.
2. Using a circle or heart-shaped cutter, cut out shapes from the dough. Place a teaspoon of the ricotta filling in the center of each heart.
3. Moisten the edges with a little water and cover with another heart of dough, pressing well to seal the edges. Make sure there are no air bubbles to prevent the ravioli from exploding during boiling.

Boiling the ravioli:
1. Boil a large pot of salted water. Add the ravioli and cook for 3-4 minutes or until they float to the surface.
2. Meanwhile, prepare the sauce: heat the butter in a pan, add the garlic, and sauté until golden. Add the cream, salt, and pepper, and let the sauce simmer for a few minutes.

Serving:
1. Drain the ravioli and add them to the pan with the sauce. Gently toss to coat them well.
2. Serve the heart-shaped ravioli on warm plates, garnished with fresh basil leaves.

Personal suggestion: You can add some toasted nuts for extra texture and a crunchy accent.

Vegetarian option: If you want a different filling, you can use sautéed spinach with garlic and feta cheese or even a mix of wild mushrooms.

These mega heart-shaped ravioli are not just a dish, but a true testament of love. Whether you prepare them for romantic dinners or to impress friends, the result will always be spectacular. So put on your apron and let your creativity flow in the kitchen!
