Diverse - Layered polenta by Simona N. - Recipia
I usually make this polenta in layers when I crave something hearty, but I want a recipe that's easy to adapt to what I have at home. It's made with ground meat, sweet corn, and canned mushrooms, so there’s no hassle with special ingredients. The layers alternate between polenta and fillings, and at the end, grated Parmesan is sprinkled on top. It’s the kind of dish you put in the oven and take care of other things in the meantime.

Quick Info

Total time: about 1 hour
Preparation time: 30 minutes
Baking time: 15 minutes
Servings: 4
Difficulty: easy
Recipe type: main dish, suitable for lunch or dinner

Ingredients

1 cup cornmeal
Water (for polenta)
Salt, to taste
50 g grated Parmesan
1 onion
250 g ground meat
150 ml tomato juice
1 can sweet corn (drained)
1 can mushrooms in oil (drained)
Pepper, to taste

Preparation method

1. Start with the meat filling. Clean and finely chop the onion. Put a tablespoon of oil in a pan and sauté the onion over medium heat, stirring to prevent burning.

2. Add the ground meat over the sautéed onion. Sprinkle salt and pepper to taste. Mix and cook until the meat changes completely color, no longer pink.

3. Pour the tomato juice over the meat and reduce the heat. Stir occasionally, letting the sauce reduce. If it evaporates too quickly or the mixture dries out, add a little water. If the tomato juice is too sour, you can sprinkle a bit of sugar. Cook until the sauce thickens.

4. Meanwhile, drain the mushrooms in oil and sweet corn. Put them in a pan without additional oil (the mushrooms already have their oil) and sauté them lightly, just to warm them up and release any excess liquid. Turn off the heat.

5. Bring water to a boil for the polenta. When it boils, add salt and the cornmeal in a rain, stirring vigorously with a whisk or wooden spoon to avoid lumps. Cook until the polenta thickens. Incorporate the grated Parmesan directly into the polenta while it's hot, mixing well.

6. Prepare a heat-resistant dish (preferably ceramic or glass). Grease it with butter.

7. Layer the ingredients: place a layer of polenta at the bottom of the dish and level it. Spread the entire meat filling with sauce evenly over it. Add a second layer of polenta, leveling again. On top, place the mixture of mushrooms and sweet corn.

8. Sprinkle grated Parmesan over the last layer.

9. Put the dish in the oven at 200°C for 15 minutes, just enough to brown the top slightly.

10. Serve the dish hot, directly from the dish.

Why I make this recipe often

I like that this recipe doesn’t involve many pots and can be prepared quite quickly. It’s filling, can easily be adapted based on what you have on hand, and is suitable when you want to use basic ingredients like cornmeal and canned goods. It cuts nicely after baking and can be easily divided into several portions.

Tips and variations

Tips

If the polenta comes out too soft, leave it on the heat a few extra minutes, stirring continuously.
The layers should be leveled as evenly as possible so that they cook uniformly.
The Parmesan can be finely or coarsely grated, according to preference.

Substitutions

You can also use grated cheese instead of Parmesan if you prefer a milder taste.
Ground meat can be pork, beef, or a mix.
If you don’t have mushrooms in oil, plain canned ones work too, just make sure they are well drained.

Variations

Add a little sweet or hot paprika to the sauce if you like it spicier.
You can add a few thin slices of fresh tomatoes on top before baking.
If you prefer without meat, you can make an extra layer of sautéed vegetables (bell peppers, zucchini).

Serving ideas

It pairs well with a simple summer salad or pickles.
Cut into squares, it can also be taken as a packed lunch.
It’s also good with plain sour cream if you want something creamier.

Frequently asked questions

Can I use leftover polenta from another meal?
Yes, just make sure it’s firm enough to spread in the dish.

Can I make the recipe without meat?
Yes, but increase the amount of mushrooms or add other sautéed vegetables to make the filling layer substantial.

What type of meat works best?
Pork or a pork-beef mix is juicier, but you can use any ground meat you prefer.

How do I prevent the polenta from sticking to the dish?
Grease the dish well with butter before layering. You can also add a bit of breadcrumbs if you want.

Can I make the recipe in advance and reheat it?
It can be reheated the next day in the oven or microwave, but the polenta tends to dry out a bit.

Nutritional values

Estimated per serving: 350-400 kcal. Protein approx. 18-20 g, carbohydrates 45-50 g, fats 12-15 g, depending on the type of meat and the amount of Parmesan used. Values are approximate and depend a lot on the brand of ingredients and whether you drain the mushrooms and corn well.

Storage and reheating

Layered polenta can be stored in the fridge, covered, for up to 2 days. Reheated in the oven or microwave, it’s acceptable, but the polenta becomes firmer. Freezing is not recommended, as the texture does not remain the same after thawing. It’s best fresh out of the oven.
