For two people, I propose a recipe for baked cauliflower that is not only delicious but also easy to prepare. The basic rule to remember is simple: vegetables that grow in the ground, like cauliflower, should be boiled in cold water, while those that grow above the ground should be added to hot, salted water. This is the key to achieving a perfect dish without the vegetable becoming soft or tasteless.

Start by breaking the cauliflower into small florets, then rinse them well under a stream of cold water. Boil them in a pot of cold salted water until they become tender, but do not let them get too soft. Once they are ready, remove the florets with a slotted spoon and set them aside.

Preheat the oven to 180 degrees Celsius. Meanwhile, generously grease a baking dish with butter and line it with breadcrumbs, ensuring it is evenly distributed. In a bowl, beat the two large eggs together with the sour cream, adding a pinch of salt and pepper to taste.

On the bottom of the dish, place a layer of boiled cauliflower florets. If you prefer to use more cauliflower, you can layer it in two layers. Sprinkle a bit of breadcrumbs and a layer of grated cheese, then add the egg and sour cream mixture. Continue with another layer of breadcrumbs and a few thin slices of butter. Repeat this process until you finish all the ingredients, making sure that the last layer of breadcrumbs is well covered with butter, so it melts and softens the surrounding breadcrumbs.

After you have completed all the layers, place the dish in the preheated oven and bake for about 30 minutes or until you notice that the dish has browned nicely on top. This dish can be served as a side dish alongside meats, fish, or even as an appetizer, being a versatile and tasty choice.

If you have bread that has dried out but is not moldy, do not throw it away! You can use the slices to create a delicious crust. Grease the baking dish with butter, cut the bread into thin slices about 1 cm thick, and arrange them in the dish. Grease the inside of the bread slices with room temperature butter. Continuing with filling the dish, add the cauliflower, the egg and sour cream mixture, and finally, you can place a lid made from the buttered bread slices or sprinkle breadcrumbs and butter. If you have individual molds, you will get some adorable baskets.

Also, if you want to add extra flavor, feel free to include chopped bacon or kaiser, lightly fried in a pan. This appetizer will surely be a hit among guests!
