Diverse - Galician Stew Lentils by Amelia O. - Recipia
The lentil stew from Galicia is a recipe that not only reflects the culinary traditions of a Spanish region but also the richness and versatility of this modest and nutrient-packed ingredient. Lentils, a legume consumed since ancient times, have a fascinating history, being regarded not just as a food source but also as a food with health benefits. This recipe is perfect for cool days when you need something nourishing and comforting.

To prepare a delicious serving of lentil stew, you will need the following ingredients: 350 grams of dried lentils (preferably brown), a medium onion, two fresh tomatoes or a can of peeled tomatoes, 50-100 grams of bacon, 300 grams of pork belly or meat, a carrot, a potato, a teaspoon of sweet paprika or a dried ñora pepper, salt, pepper, bay leaves, and a few cloves of garlic.

We start by preparing the lentils. It is recommended to soak them overnight to rehydrate and cook more easily. If you are using lentils that do not require soaking, you can proceed directly to preparation. Rinse the lentils well and set them aside. Peel the onion, garlic, and carrot, chopping them finely, and you can peel and dice the tomatoes.

In a large pot, add a tablespoon of lard or oil and sauté the onion together with the garlic and ñora pepper. The ñora pepper, with its distinctive aroma, will give a special flavor to the stew. After a few minutes, add the bacon and pork belly, letting them brown a little. Then, add the tomatoes and lentils, mixing well. Cover the ingredients with water, leaving about two fingers of space above. Add salt, pepper, cumin, and bay leaves.

Place the pot over medium heat and let it boil. When it starts to boil, reduce the heat to low and let it simmer for about an hour and a half. Halfway through the cooking time, add the diced carrot and potato. These vegetables will not only add flavor but also texture to the stew.

Once the lentils are tender, you can adjust the consistency of the dish. If it is too liquid, you can remove a few tablespoons from the mixture, mash them, and add them back to the pot. This trick will thicken the stew and enhance its flavors. Serving can be simple, but you can also add some slices of pickled cucumbers or a splash of vinegar for a contrast of flavors.

This lentil stew is not only nourishing but also an excellent choice for vegetarians or those looking to diversify their diet. It is an accessible recipe that can be easily adapted based on tastes and available ingredients. So, don’t hesitate to try this Galician delicacy that will surely bring a touch of Spanish tradition to your kitchen! Enjoy your meal!
