To prepare these delicious chicken breast rolls, we start by portioning the breast so that we obtain pieces of ideal size to create appetizing rolls. In my case, I managed to get six suitable pieces. The next important step is to flatten each piece of breast between two sheets of cling film (or plastic bags) to thin them out evenly. This process not only helps achieve a tender texture but also allows for better absorption of the spices. After we finish flattening, we season each piece with salt and pepper to taste.
Now, let’s focus on the filling. We place a fresh spinach leaf on each piece, followed by a slice of cheese that will add a creamy and savory taste. We continue with a slice of ham, which will bring a rich flavor, then add another slice of cheese, and finish with another spinach leaf. This layer of ingredients will not only provide a special taste but will also ensure a beautiful color for the rolls. After placing the filling, we carefully roll each piece and secure it with a toothpick to ensure that the filling stays well wrapped.
Next, we pass the rolls through flour, then dip them in beaten egg, and finally cover them with breadcrumbs to give them a crispy crust. Now they are ready to be fried! We heat oil enough to fry them in a deep-fry bath until we achieve a golden and crispy crust.
For the rice side dish, we start by heating oil together with butter in a large pan. We add the rice and let it sauté for a few minutes, stirring constantly to prevent sticking. Then, we add the broth made from the leftover bone from the breast, a carrot, an onion, salt, peppercorns, and a bay leaf. It is important to add the broth gradually, stirring continuously, so that the rice absorbs all the delicious flavors. Once the rice is cooked, we can also add the grated cheese, stirring until it melts and is evenly incorporated into the rice. Personally, I decided to add the carrot from the broth, finely chopped, to provide additional texture and color.
The chicken breast rolls are served hot, alongside the rice side dish, but they can also be accompanied by other vegetables or fresh salads, depending on everyone’s preferences. These dishes are not only tasty but also very visually appealing, making them ideal for a special dinner or to impress guests. Enjoy your meal!
