Cauliflower and pasta pudding with white sauce is a hearty and delicious appetizer, perfect for festive meals or to add a touch of originality to your daily menu. This recipe combines the fine texture of cauliflower with the flavor of pasta and white sauce, offering a dish that will delight both the taste buds and the eyes. Here’s how you can prepare it!

For this recipe, you will need the following ingredients: 500 g of cauliflower, 300 g of pasta (preferably penne or fusilli), 200 ml of milk, 100 g of cooking cream, 50 g of butter, 100 g of grated cheese (parmesan or mozzarella), a bunch of fresh basil, salt and pepper to taste. I advise you to choose a fresh cauliflower with compact florets and a pristine white color.

Start by preparing the cauliflower. Boil the cauliflower florets in salted water for about 10 minutes, or until they become tender but not too soft. After boiling, drain them and let them cool slightly. In the meantime, bring a pot of water to a boil for the pasta. Add salt and put in the pasta, cooking them according to the package instructions. Once the pasta is ready, drain it and set it aside.

In a large skillet, melt the butter over medium heat and add the milk, stirring constantly. Add the cream and continue stirring until the mixture becomes homogeneous. At this point, add the grated cheese and season with salt and pepper to taste. When the cheese has completely melted, gently fold in the boiled cauliflower florets, being careful not to crush them.

Add the pasta to the cauliflower and cheese mixture, carefully mixing everything to combine the ingredients. Finally, pour the mixture into a greased baking dish. Sprinkle the chopped fresh basil on top and, if desired, add a little more grated cheese for a crispy appearance.

Place the dish in the preheated oven at 180 degrees Celsius and let it bake for 30-35 minutes, until the pudding becomes golden and succulent. Once it’s done, take the pudding out of the oven and let it cool for a few minutes before cutting and serving.
