Discover how to prepare a delicious oven-roasted lamb, with enticing aromas and perfect textures. This simple yet refined recipe is sure to become a favorite at holiday meals or family weekends. With a combination of juicy onions, creamy potatoes, and tender lamb meat, this dish will impress anyone.

Ingredients:
- 1.5 kg lamb meat (shoulder or leg)
- 4 tablespoons of quality olive oil
- 2 large onions, cut into large pieces
- 4 large potatoes, peeled and sliced about 1 cm thick
- 4 cloves of garlic, finely chopped
- 1 teaspoon of dried thyme (or 2 tablespoons of fresh thyme)
- 1 teaspoon of dried rosemary (or 2 tablespoons of fresh rosemary)
- Salt and pepper to taste
- 200 ml dry white wine (optional)
- 500 ml water or meat broth

Preparation steps:

1. Preheat the oven to 180°C. This is the perfect time to make sure you have all the ingredients on hand and that your oven-safe dish is prepared.

2. In a tall oven-safe dish, add the 4 tablespoons of olive oil. This will help achieve a golden crust on the meat, so don’t skip this step.

3. Add the chopped onions. The onions will add sweetness and create a flavorful sauce during baking. Sauté the onions over medium heat for 3-4 minutes until they become translucent.

4. Place the lamb meat in the dish, ensuring it is well covered by the onions. Season with salt, pepper, thyme, and rosemary. These herbs will enhance the flavors, giving the lamb a perfect taste.

5. Add the peeled and sliced potatoes. The potatoes will not only absorb the juices from the meat but will also add a contrasting texture. Gently mix everything to combine the flavors.

6. If you want to add a touch of elegance, pour the dry white wine over the meat and vegetables. This will bring subtle notes of acidity. If you prefer a non-alcoholic version, you can omit the wine and use only water or meat broth.

7. Add water or meat broth, ensuring that the liquid partially covers the ingredients. This will help maintain moisture during baking.

8. Cover the dish with a lid or aluminum foil to keep all the juiciness. Place the dish in the preheated oven and let it bake for 1 hour.

9. After an hour, remove the lid or foil and let the dish continue to bake for another hour to achieve a nicely browned crust. Every 20 minutes, you can baste the meat with the juices from the dish to enhance its flavor.

10. Check if the lamb is tender and easily pulls apart with a fork. If necessary, you can leave it in the oven for another 10-15 minutes.

Serving suggestions:
Serve the lamb alongside the flavored potatoes, garnished with a few fresh parsley or rosemary leaves. A fresh green salad or grilled vegetables would perfectly complete the meal.

Variations:
For an exotic touch, you can add green or red olives to the dish, or even a few slices of lemon for a fresher taste. You can also try replacing the potatoes with carrots or celery, depending on your preferences.

Enjoy this savory oven-roasted lamb, which will turn any meal into a true culinary celebration!
