Strawberry Cake – A Refreshing and Aromatic Dessert

Ingredients:
- 4 eggs
- 4 tablespoons of sugar (2 for egg whites, 2 for yolks)
- 4 tablespoons of flour

- 1 teaspoon instant coffee
- 1 teaspoon grated orange zest
- 1 tablespoon cognac (or rum, according to preference)
- 1 vanilla essence
- 1 rum essence
- 1 baking powder
- 2 tablespoons of cocoa
- 2 bananas, sliced
- A few kiwis, sliced
- 1 kg strawberries, cleaned and halved
- 1 packet of lemon cream
- Milk (about 200 ml, for preparing the cream)
- Fresh mint, for decoration
- A pinch of salt
- White and dark chocolate, for decoration
- Pineapple juice, to soak the layers

Preparation:

1. Start by preheating the oven to 180°C. Prepare a baking tray (about 30x20 cm) lined with baking paper.

2. In a large bowl, beat the egg whites with a pinch of salt until foamy. Gradually add 2 tablespoons of sugar, continuing to mix until you achieve a firm meringue. The secret to perfect meringue is to use eggs at room temperature.

3. In another bowl, mix the egg yolks with the other 2 tablespoons of sugar until the mixture becomes creamy and light in color. Add the flour, baking powder, cappuccino, coffee, orange zest, cognac, vanilla and rum essences, and cocoa. Mix well.

4. Slowly fold the beaten egg whites into the yolk mixture using a spatula to retain the air from the egg whites. Pour the mixture into the prepared tray and level the surface.

5. Bake the layer for 20 minutes or until golden and passes the toothpick test. Let it cool completely before removing it from the tray.

6. Meanwhile, prepare the lemon cream according to the package instructions, adding the necessary milk. You can enhance the flavor by adding a bit of pineapple juice as well.

7. Once the layer has cooled, cut it into equal squares. Soak each square with a little pineapple juice to give it a moist and flavorful texture.

8. Assemble the cake: on each square of the layer, add a layer of lemon cream, followed by slices of banana, kiwi, and strawberries. You can also add a drizzle of melted chocolate for extra flavor.

9. Decorate with fresh mint and white and dark chocolate flakes for an attractive appearance.
