Quick pancakes

Dessert - Quick pancakes by Mirela A. - Recipia

Quick pancakes turn out fluffy when the batter is thick and runs slowly off the ladle, without spreading it in the pan. Eggs, flour, butter and sparkling water give them a soft center, while the lemon zest stays subtle; I prefer to stop adding water while the batter still holds its shape a little. Preparation: 10 minutes. Cooking: 28 minutes. Rest: 5 minutes. Total time: 43 minutes. Servings: 4. About 420 kcal and 12 g of protein per serving.

Ingredients

  • 2 eggs
  • 1 pinch of salt
  • 3 tablespoons sugar
  • 1 tablespoon butter
  • 350 g flour
  • 1 level teaspoon baking powder
  • 250 ml sparkling water
  • 1/2 teaspoon lemon zest

Preparation

1. Melt the butter over low heat for about 1 minute, then leave it to cool for 5 minutes. In a bowl, beat the eggs with the salt and sugar, then stir in the butter. 2. Mix the flour with the baking powder. Gradually add them to the bowl, alternating with the sparkling water, poured in a little at a time, until you have a thick batter. Add the lemon zest at the end. 3. Heat a nonstick pan without oil for 2 minutes over medium heat. Pour a ladleful of batter into the middle without spreading it. Cook each pancake for about 2-3 minutes, turning it when bubbles appear on the surface; cook all the batter in about 25 minutes, until golden brown.

Notes

Serve them as they are with honey and sliced banana. For a dairy-free version, swap the butter for 1 tablespoon of oil; as written, they contain gluten, eggs and dairy. If you have any left, keep them in a sealed container in the fridge and eat them within 3 days. I don't rush the flip, I wait until bubbles show on the surface, otherwise the center can tear. Their size affects the cooking time, smaller ones are ready sooner. Cook them shortly before serving; if you double the quantity, mix the batter in two batches.

Frequently asked questions

Can I replace the sparkling water with milk?

Yes, you can use 250 ml of milk instead of the water, but the pancakes will be less airy.

Why do they turn out flat?

If the batter sits for more than 20 minutes before it goes into the pan, it loses some of the air from the sparkling water and baking powder.

Can I make them smaller?

Yes, use 2 tablespoons of batter for each one and turn them after about 1 minute, when bubbles appear on the surface.
