Peach tray bake

The peach tray bake is baked in a large pan, with peaches on top of a fluffy batter rich in eggs and sour cream. The separately beaten egg whites are gently folded in, and the breadcrumbs on the fruit soak up some of their juices; in the end, it has a soft crumb and lightly browned edges. I cut it into small squares and eat it with a fork while it’s still fresh. Preparation: 30 minutes. Cooking: 56 minutes. Resting: 15 minutes. Total time: 101 minutes. Servings: 20. Approximately 330 kcal and 7 g protein per serving.
Ingredients
- 1 kg peaches
- 4 tablespoons breadcrumbs
- 500 g flour
- 1 packet baking powder (10 g)
- 10 eggs
- 400 g sugar
- 2 packets vanilla sugar (16 g)
- 200 g Rama margarine
- 150 ml sour cream
- 1/8 teaspoon salt
- 1 lemon (grated zest)
- 30 g powdered sugar
Preparation
1. Wash the peaches, leave them to drain and cut them into slices. Toss them with the breadcrumbs. 2. Mix the flour with the baking powder. Melt the margarine over low heat for 2-3 minutes, then leave it to cool for 15 minutes. Preheat the oven to 180°C, about 10 minutes. 3. Separate the eggs. Beat the yolks with 300 g sugar and the vanilla sugar until creamy, then gradually add the cooled margarine and sour cream. Fold in the flour and baking powder mixture and the grated lemon zest. 4. Beat the egg whites with the salt until stiff. Gradually add the 200 g sugar and beat until it dissolves, then fold the egg whites into the yolk mixture with a spatula, lifting from the bottom up. 5. Line a 45 × 35 cm pan with baking paper. Pour in the batter, level it and arrange the peaches on top. 6. Bake for 45 minutes at 180°C, until the edges are lightly browned and a toothpick inserted into the batter comes out clean. Dust with powdered sugar and cut once cooled.
Notes
Keep covered at room temperature until the next day, then refrigerate for up to 3 days. You can replace the peaches with 1 kg nectarines; the cake contains gluten, eggs and dairy. Choose ripe but still firm fruit, and let it drain well after washing. A 45 × 35 cm pan gives the batter a suitable depth; in a smaller one the layer will be thicker and may need more time in the oven. Very soft peaches can sometimes leave a damp patch under the fruit. Like a fruit loaf cake spread out on a tray, it cuts easily into squares and goes well with a cup of black tea.
Frequently asked questions
Can I use apples instead of peaches?
Yes, use 800 g apples, peeled and cut into thin slices; the flavor will be less sweet than with ripe peaches.
Can I use canned peaches?
Yes, use 850 g well-drained peaches and pat them dry before tossing them with the breadcrumbs.
Why did the middle sink after baking?
It may still be underbaked where the batter is, especially if the fruit released a lot of juice. Leave the pan in the oven for another 5 minutes at 180°C and test with a toothpick in a spot without fruit.
