Multicooker magic cake

Dessert - Multicooker magic cake by Evelina F. - Recipia

The multicooker magic cake bakes for an hour at 180°C and develops golden edges. The eggs, milk and butter keep the middle soft, almost like crème brûlée, while the rose water gives it a subtle fragrance; I prefer it cold, with a slice of peach. Preparation: 20 minutes. Cooking: 63 minutes. Rest: 5 minutes. Total time: 88 minutes. Servings: 8. Approximately 205 kcal and 5 g protein per serving.

Ingredients

  • 4 eggs
  • 4 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons rose water
  • 100 g butter
  • 4 tablespoons flour
  • 400 ml milk
  • 1/8 teaspoon salt
  • 1 teaspoon oil
  • 1 tablespoon flour
  • 1 medium peach (150 g)

Preparation

1. Separate the yolks and whites into two clean, dry bowls. 2. Melt the butter over low heat for 3 minutes, stirring, then leave it to cool for 5 minutes, until just warm. 3. Beat the yolks with the sugar, vanilla extract and rose water for 5 minutes, until the sugar dissolves and the mixture doubles in volume. 4. Stir in the warm butter, then the 4 tablespoons of flour and the milk. Mix until smooth. 5. Beat the egg whites with the salt for 4 minutes, until glossy and firm. Gently fold them into the yolk mixture. 6. Remove the multicooker pot and grease it with oil, then dust it with 1 tablespoon of flour. Pour the mixture into the pot and place it in the appliance. 7. Set the BAKE program to 180°C for 1 hour. The edges should be golden. Cut the peach into slices and use them to decorate.

Notes

Contains gluten, eggs and dairy. Keep covered in the fridge for up to 3 days; leave a slice out for a little while before serving, since the middle is firmer when cold. Eggs at room temperature beat more quickly, and the butter should be just warm when you add it to the yolks. Choose a roomy bowl for the egg whites, as the foam expands a lot. Serve with a fresh peach and black tea.

Frequently asked questions

What can I use instead of rose water?

Add 1 teaspoon of finely grated lemon zest to the yolks instead of the 2 tablespoons of rose water.

Can I use salted butter?

Yes. Use 100 g of salted butter and leave out the salt in the egg whites.

Why does the middle stay soft?

The milk keeps the center creamy, even as the edges brown. After an hour at 180°C, the texture in the middle is still closer to a custard than an ordinary cake.
