Buttermilk pancakes

Currant syrup and peach pieces go with these golden buttermilk pancakes, cooked in a pan. The thick batter, bound with butter, puffs up a little as it cooks and stays soft in the middle, with a golden surface dotted with bubbles. I pour syrup over a few pancakes at a time, so I can keep the rest less soggy. Prep: 10 minutes. Cook: 32 minutes. Rest: 5 minutes. Total time: 47 minutes. Serves: 4. About 600 kcal and 15 g protein per serving.
Ingredients
- 300 g flour
- 2 tablespoons sugar
- 2 level teaspoons baking powder
- 1 level teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 500 ml buttermilk
- 60 g butter
- 15 ml oil
- 60 ml currant syrup
- 2 peaches (300 g)
Preparation
1. In a bowl, stir the flour, sugar, baking powder, baking soda and salt with a spoon until evenly combined. 2. Melt the butter in a small saucepan over low heat for 2 minutes, then leave it to cool for 5 minutes. 3. In another bowl, beat the eggs with the buttermilk and melted butter until smooth. 4. Pour the wet mixture over the flour and whisk it in. The batter will stay thick, with a few small lumps. 5. Heat a pan over medium heat and grease it with a little of the 15 ml oil. Pour the batter into the pan; cook about 10 pancakes, 2 minutes on the first side, until bubbles appear on the surface, then 1 minute on the other side, until golden. Use the remaining oil to grease the pan between batches; cooking takes about 30 minutes. 6. Serve with the currant syrup and peaches cut into pieces.
Notes
The pancakes keep in the fridge for up to 3 days in a sealed container. Let the melted butter cool until just warm before mixing it with the eggs; if it is hot, it can cook the egg. If you don't have buttermilk, use 500 ml plain kefir, which has the right acidity for the baking soda. The pancakes contain gluten, dairy and eggs; they go well with black tea on the side. If the pan is smoking, it's too hot; lower the heat and wait for it to settle before carrying on.
Frequently asked questions
Why do the pancakes turn out dense?
Mixing for too long can make them rubbery. After you pour in the liquids, mix for no more than 15-20 seconds, until you no longer see dry flour.
Can I replace the eggs?
For 2 eggs, mix 2 tablespoons ground flaxseed with 6 tablespoons water and leave the mixture for 5 minutes before using it. The pancakes will be less fluffy.
Can I use frozen peaches?
Yes, use 300 g frozen peaches, thawed and well drained, instead of fresh ones.
