The pie crust is an essential element for achieving a delicious dessert, and although I resorted to store-bought dough, the preparation process can be just as captivating. After taking the crust out of the oven, where it was baked briefly to develop a slightly brown color, I let it cool while preparing the filling.

For the filling, I used yams, which I had previously baked and carefully peeled. This type of potato is perfect due to its natural sweetness and creamy texture. After mashing them, I brought a large bowl where I added the egg whites, mixing them with a mixer to whip them well. The whipped egg whites add a slight lightness to the filling, and the agave nectar I used as a sweetener contributes a subtle and natural flavor. If you prefer, you can also opt for honey, which will add a distinct note.

I continued by combining the mashed potatoes with a pinch of cinnamon and cloves, adjusting the spices to taste. It is important to mix the composition well until it becomes homogeneous, after which I added the milk. The amount of milk can vary depending on the size of the bowl you are using, but the filling should have a medium consistency – neither too liquid nor too firm.

Once I obtained the ideal filling, I carefully filled the pie crust, making sure the distribution was even. I preheated the oven and placed the pie at a high temperature for the first ten minutes to allow the crust to become crispy. Then, I reduced the temperature to medium, continuing to bake until a toothpick inserted in the middle of the filling came out clean, indicating that the pie was ready.

An important aspect is to ensure that the edges do not burn; to prevent this, you can cover the edges with parchment paper during baking. Once the pie is done and has been allowed to cool slightly, you can decorate it to your liking. I recommend serving it with whipped cream, to which you can add a pinch of cinnamon for an extra flavor boost. This yam-filled pie is not just a dessert, but an explosion of flavors, perfect for concluding a meal.
