To prepare a delicious ricotta and orange cake, we will start by ensuring that all the ingredients are at hand and that we have a well-structured plan. The first step is to take care of the raisins; we soak them in rum, which will give them an intense and aromatic flavor. We let the raisins absorb the rum flavor for about 30 minutes.

In the meantime, we take care of the oranges. We carefully peel them, removing both the skin and the white pith, which can impart a bitter taste. Once the oranges are peeled, we cut them into small pieces and let them drain to eliminate excess juice.

Now we turn our attention to the gelatin. We soak it in 4 tablespoons of cold water, letting it hydrate for 10-15 minutes. The gelatin will be the key ingredient that helps the cake achieve a firm and creamy structure.

Next, we take care of the ladyfingers. We will soak them in a mixture of freshly squeezed orange juice and a bit of sweet white wine, so we get a flavorful base for the cake. We arrange the ladyfingers in a 28 cm mold, covering them evenly to form a solid base.

From now on, we proceed to prepare the filling. In a large bowl, we mix the ricotta with 150 g of sugar and vanilla sugar. We add the grated orange zest, which will provide extra flavor, and we mix the composition well. It’s time to add the melted gelatin, ensuring it is at the right temperature so it doesn’t coagulate the filling.

Separately, we whip the cream for the topping with the remaining 50 g of sugar until it becomes firm and fluffy. Then, carefully, we fold the whipped cream into the ricotta mixture, along with the drained oranges and the hydrated raisins. We mix everything with a spatula, being careful to keep the air in the whipped cream, to achieve a light and creamy texture.

We carefully pour this filling over the ladyfinger base and level the surface with a spatula. We cover the mold with plastic wrap and refrigerate the cake, letting it cool and set overnight.

The next day, we take the cake out of the fridge and start decorating. We can use fresh fruits like orange slices, mandarins, or even a few mint leaves for an even more appealing look. On top, we pour the gelatin prepared according to the instructions on the package, which will give the cake an appetizing shine.

This ricotta and orange cake is not only a visual delight but also a treat for the taste buds. If we want a denser consistency, we can add two packets of gelatin, turning it into a true diplomat. If we don’t have oranges on hand, we can experiment with mandarins or clementines, adapting the recipe to the available ingredients. This cake is perfect for any special occasion, bringing a touch of elegance and flavor to any meal.
