In a double-bottomed bowl, we carefully add fresh egg yolks, granulated sugar, and sweet white wine. It is important to choose a quality wine that will bring a pleasant aroma to our dish. We mix the ingredients with a wooden spatula or a whisk until the yolks break down and the sugar begins to dissolve. Once we have a homogeneous mixture, we place the bowl over low flame on the stove, being careful not to let the fire be too strong, to avoid coagulating the yolks.

This process can take between 5 and 10 minutes, so we must be patient and enjoy the transformation of the ingredients.
