To prepare a delicious and refreshing watermelon sorbet recipe, we start by preparing the necessary ingredients. The first step is to take the juicy pulp of the watermelon, which we will carefully peel. After removing the rind, we need to ensure that we also remove the seeds, to achieve a fine and pleasant texture in the end. Once we have the clean pulp, we cut it into smaller pieces and weigh it, so we know exactly how much watermelon we have used.

The next step is to put the pulp in a blender and blend it well until we obtain a smooth paste, with a creamy and tempting appearance. This paste will be the base of our sorbet. In a separate pot, we pour the juice obtained from the blender and add the sugar, mixing well to combine. We bring the pot to the heat, but we must be careful not to let the mixture boil too much. It is enough to let it simmer for about 5 minutes, until the sugar completely dissolves in the watermelon juice. After the sugar has melted, we take the pot off the heat and let the syrup cool down.

To add a note of freshness, we squeeze the juice from half a lemon and add it to the cooled syrup. We mix well to ensure that the lemon juice is evenly distributed throughout the mixture. This addition will keep the sorbet more vibrant and will counteract the sweetness of the watermelon.

Once we have mixed all the ingredients, we pour the mixture into a container and put it in the freezer for about 12 hours. It is ideal to let the sorbet freeze overnight, to achieve a perfect consistency. The next day, we take the container out of the freezer and use a knife to cut the sorbet into smaller pieces.

To achieve an even creamier texture, we take a scoop of the frozen mixture and put it back in the blender, blending it until it becomes smooth again. This step is essential to obtaining an airy and delicious sorbet. After we have achieved a pleasant consistency, we rearrange the mixture in the container and return it to the freezer for another 2-3 hours.

Thus, after all these steps, the watermelon sorbet is ready to be enjoyed! It is a perfect dessert for hot summer days or as a refreshing snack at any time of the day. Enjoy!
