To prepare a delicious tiramisu, we start by ensuring that the ingredients are at room temperature. It is essential that the mascarpone containers are taken out of the fridge about 30 minutes before starting the cooking process, as this will facilitate mixing. While we wait, we take care of the coffee. Prepare your favorite coffee, whether it's espresso or a lighter brew, then let it cool completely. This will be the base that gives flavor to the ladyfingers.

In a large bowl, add the mascarpone, egg yolks, sugar, and vanilla essence. Using a mixer or a spatula, mix the ingredients until you obtain a smooth and fine cream, without lumps. It is important to be patient at this stage to ensure a velvety texture of the cream. In another bowl, whip the cream until it becomes firm. Then, carefully fold this whipped cream into the mascarpone cream, gently mixing with a spatula to keep the air in the mixture.

Once the cream is ready, we move on to preparing the ladyfingers. They will be soaked in the cooled coffee, so take each ladyfinger and dip it in the coffee, letting it soak for about 2 seconds on each side. The soaking can vary according to preferences, so adjust the time depending on how moist you want the ladyfingers to be. Place the ladyfingers in a dish with the sugar side down, forming the first layer.

Once the layer of ladyfingers is complete, evenly spread half of the mascarpone cream over them. Use a spatula to ensure an even coating. Then, sift cocoa over the mascarpone cream, forming a thin layer of cocoa that will add a rich flavor and a hint of bitterness. Sprinkle half of the grated or chopped chocolate, which will provide an extra texture and flavor.

Next, add a new layer of ladyfingers, but this time, place them in the opposite direction of the first ones for better stability. After you are done, spread the remaining mascarpone cream, sift cocoa again, and sprinkle the rest of the grated chocolate on top. This is the perfect time to ensure that each layer is well uniform.

Cover the dish with plastic wrap and let the tiramisu rest in the fridge for about 12 hours. This waiting time is crucial as it allows the flavors to develop and blend perfectly. Before serving, decorate with additional cocoa if desired, and enjoy this delicious dessert that, although it may not look impeccable, will certainly impress with its taste. It is ideal to keep the tiramisu chilled in the fridge so that it remains fresh and delicious.
