To prepare a refined and delicious dessert, the first step is to ensure we have all the necessary ingredients and that we organize our time efficiently. We start by preparing the coffee, choosing a quality coffee, preferably one that is intense and aromatic, which will give a special flavor to our dessert. Ideally, we should let the coffee cool a little, so as not to affect the texture of the biscuits we will use.

Once the coffee is ready, we dedicate ourselves to preparing the cream. In a large bowl, we carefully separate the egg yolks from the egg whites. The egg whites are whipped into a foam using a mixer, gradually adding the sugar until the mixture becomes firm and glossy, with a texture similar to a fine cream. It is important to ensure that the sugar is completely incorporated so that the foam does not deflate. After achieving this perfect foam, we add the mascarpone, an essential ingredient that will give creaminess and a rich taste to the dessert. We gently mix with a spatula so as not to deflate the foam until everything is homogenized.

Now that the cream is ready, we prepare the tray in which we will assemble the cake. A medium-sized tray is ideal; we can use a rectangular tray to facilitate portioning. We start assembling the cake: each biscuit is quickly soaked in coffee, being careful not to leave them too long, so they do not disintegrate. The soaked biscuits are evenly placed on the bottom of the tray, forming a first layer that will act as a base.

Over this first layer of biscuits, we add half of the mascarpone cream, spreading it with a spatula to perfectly cover each biscuit. We continue with another layer of coffee-soaked biscuits, followed by the rest of the cream, which we level again. Finally, to beautify the dessert and add a note of bitterness, we sprinkle cocoa using a sieve, so as to obtain a uniform and elegant layer.

After we finish assembling the cake, we let it sit in the fridge for a few hours, ideally overnight, to allow the flavors to meld and to achieve a perfect texture. When we are ready to serve, we cut the cake into portions and enjoy every bite, savoring the delicious combination of coffee, mascarpone, and biscuits. This cake will surely become a favorite among loved ones!
