To prepare a refined and delicious dessert, we will start by making the coffee syrup, which will add an intense flavor and a touch of sophistication. Put water in a saucepan and add the ground coffee, then bring to a boil. Once it starts boiling, reduce the heat and let the coffee simmer gently for a few minutes. Once you have a concentrated syrup, take the saucepan off the heat and let the coffee cool completely.

Meanwhile, prepare the ingredients for the cream mixture. Separate the egg whites from the yolks, making sure the bowls are clean and dry. Beat the egg whites at medium speed until they become frothy. To speed up this process, you can add a pinch of salt, which helps the egg whites whip faster and become more stable. Once the egg whites reach a firm consistency, gradually add the sugar, continuing to beat until you obtain a glossy and firm foam.

In another bowl, whisk the yolks with the sugar until the mixture becomes creamy and light in color. Melt the gelatin according to the instructions on the package and add it to the yolk cream, mixing well to avoid lumps. Then, fold in the whipped cream gently with a spatula, ensuring you keep the air in the mixture.

Once the mixtures are ready, carefully combine them, taking care not to lose volume. Now, prepare the ladyfingers. Quickly dip them in the cooled coffee, being careful not to soak them too long to avoid them becoming too soft. Place a first layer of ladyfingers at the bottom of a dish, then add half of the cream mixture. Repeat the process with another layer of ladyfingers and add the remaining cream on top.

To give the dessert a special appearance, dust the surface with cocoa powder, which will create a pleasant color contrast. You can decorate with fresh fruits, such as strawberries, kiwi, or raspberries, and add a few dollops of whipped cream for an extra touch of refinement. This dessert should be left in the refrigerator for at least four hours, but ideally overnight, for the flavors to blend perfectly.
