In a large bowl, start patiently mixing the eggs with the sugar and lemon essence until you achieve a homogeneous and fluffy composition. It is essential that the sugar completely dissolves to ensure a fine texture of the doughs. Once this is done, gradually add the oil, mixing constantly, as if you were preparing mayonnaise. This step will add moisture and flavor to the preparation.

After the oil is well incorporated, proceed to add the sifted flour along with the baking powder. Gently mix using a spatula or wooden spoon until you obtain a homogeneous dough, but not too hard. It should be soft enough to be easily shaped. Dust your hands with a little flour to prevent sticking and start forming small balls the size of a smaller walnut.

Prepare a tray, lining it with baking paper, and arrange the balls in rows, leaving a little space between them. Then, place the tray in the preheated oven at the right temperature for about 20 minutes. Caution! If the heat is too strong, the balls will crack, so it is important to closely monitor the baking process. Once the balls are golden brown, take the tray out of the oven and let them cool completely.

After they have cooled, each ball is hollowed out with a teaspoon, being careful not to ruin their shape. This step is essential to create a generous space for filling. You can use your favorite cream: whether you choose Nutella, a sugar butter cream with cocoa and nuts, or any other delicious combination, generously fill the balls. Then, stick them together in pairs, thus forming a "peach".

To add a touch of magic, prepare a mixture of sweet milk and food coloring. Dip each ball in this mixture, then roll them in sugar, so they gain an unmistakable shine. After decorating all the peaches, carefully place them in a container and put them in the fridge. Here, the sugar will harden, and the peaches will become even more appealing.
