Desert - Muffins with Nuts, Bananas, and Chocolate by Violeta D. - Recipia
We start preparing these delicious banana and chocolate muffins by preparing a generous bowl in which we will mix the soft butter with the sugar. Using an electric mixer or a spatula, we combine the two ingredients until we achieve a creamy and homogeneous texture, a light yellow color. It is essential that the butter is at room temperature to incorporate perfectly with the sugar. This step will add a rich flavor and pleasant aroma to our muffins.

Next, we add a fresh egg, which we will carefully incorporate into the butter and sugar mixture. Then, we take a few ripe bananas, which we mash with a fork or a blender until we obtain a fine puree. This banana puree will not only enrich the flavor of the muffins but will also contribute to their moisture and fluffy texture. Everything is mixed well so that the ingredients are homogeneous.

In another bowl, we take care of the dry ingredients. We mix the flour with the baking powder, chopped walnuts, and chocolate chips. It is important that these ingredients are well combined so that each muffin has an even distribution of flavors and texture. Once the mixture is ready, we gradually add it to the bowl with the wet mixture, continuing to mix carefully. We want a homogeneous composition, but without overmixing, to maintain the aeration of the dough.

Finally, we pour the buttermilk into the mixture, which will provide additional creaminess and help improve the texture. We mix again until everything is homogenized. We preheat the oven to 175 degrees Celsius, which is ideal for baking muffins.

In the meantime, we prepare the muffin tin by lining it with paper liners. These will help with the easy release of the muffins after baking. The obtained mixture is carefully poured into each liner, ensuring that the batter does not exceed 3/4 of their height, to allow the muffins to rise beautifully.

After filling all the liners, we place them in the preheated oven and let them bake for about 20 minutes. During this time, the muffins will rise and take on a golden hue, emitting inviting aromas. It is essential to perform the "toothpick test" before removing them from the oven; if the toothpick comes out clean, the muffins are ready.

After taking them out of the oven, we let them cool on a rack, where they will continue to reveal their flavors. These muffins are ideal for a healthy breakfast or for a sweet snack at any time of the day. Served plain or with a little whipped cream, they are definitely a delicious choice!
