To create some delicious and attractive cookies, start by preparing the dough. Gather all the necessary ingredients: flour, sugar, butter, eggs, and any preferred flavors like vanilla or citrus zest. If you prefer, you can use a food processor to make the process easier. Combine the ingredients until you obtain a homogeneous dough, but be careful not to overmix, as the cookies may become tough. Once the dough is ready, wrap it in plastic wrap and refrigerate for a minimum of 3 hours. This step is essential because it allows the ingredients to blend perfectly, and the dough becomes much easier to roll out.

After the dough has chilled, preheat the oven to 190°C, which is approximately 400°F. It is important to have the oven well preheated before putting in the cookies to ensure even baking. In the meantime, take the dough out of the refrigerator and cut a piece to roll out. The rest of the dough should remain in the fridge to avoid softening. Use a rolling pin to roll out the dough to a thickness of about 0.8-1 cm. This thickness is ideal because the cookies will be tender and will not dry out during baking.

Once you have rolled out the dough, use cookie cutters of various sizes to cut out the cookies. You can opt for festive shapes like stars, Christmas trees, or other seasonal symbols, depending on the occasion. Place the cookies on a baking sheet lined with parchment paper, making sure to leave enough space between them as they will expand slightly during baking. Place the tray in the oven and bake the cookies for a maximum of 10 minutes. It’s good to keep an eye on them, as baking time may vary depending on the type of oven; I have found that 10 minutes is perfect for my electric oven.

Once the cookies have a nice golden color on the edges, take them out of the oven and let them cool on a wire rack. In the meantime, you can prepare the decoration. If you want to add a touch of elegance, you can use royal icing, a delicious mix of powdered sugar, cornstarch, and dehydrated egg whites, which you can color with food coloring. I used orange and black coloring to create a festive effect. Apply the icing to the cookies using a piping bag or a spatula, or simply dust the cookies with powdered sugar for a simpler yet equally attractive look. These cookies are perfect to be served at a party or as a sweet snack at any time of the day. Enjoy every bite!
