Desert - Lemon Cake by Adela C. - Recipia
To prepare a delicious lemon cake, start by separating the ingredients and making a work plan. Eggs and sugar are the two main base ingredients that will give consistency and sweetness to your dessert. In a large bowl, beat the eggs with the sugar using a mixer on medium speed until the mixture becomes creamy and the sugar has completely dissolved. It is important to pay attention to this step, as proper beating will ensure an airy texture for the cake.

After the sugar has dissolved, gradually add the oil while continuing to mix. The oil will provide moisture and prevent the cake from drying out. The next step is to integrate the starch and flour, gently mixing with a spatula or with the mixer on low speed. It is essential not to mix too much to avoid gluten development, which could make the cake denser. Add the baking powder, ensuring it is well distributed in the batter.

Once you have a homogeneous mixture, add the grated lemon peel and lemon juice. The fresh lemon aroma will give a refreshing taste to the cake, so don't hesitate to use organic lemons to benefit from all the flavor of the peel. Mix the ingredients until everything is well combined.

Prepare a pan with a hole in the middle, with a diameter of 28 cm, greasing it with butter and dusting it with flour to prevent the cake from sticking. Pour the batter into the pan, ensuring it is evenly distributed. Preheat the oven to 175 degrees Celsius and place the pan inside, allowing the cake to bake for about 45 minutes. In the last 10 minutes of baking, it’s the perfect time to prepare a delicious syrup.

Put a pot on the stove with water, lemon juice, and sugar, letting it simmer on low heat for 10 minutes until you get a slightly thick syrup. When the cake is baked, remove it from the oven and soak it with the hot syrup, so it will absorb the flavors and become even tastier. Let it cool in the pan.

Once it has completely cooled, remove the cake from the pan and prepare the glaze. Mix the powdered sugar with lemon juice, being careful to achieve a consistency that is not too liquid. Use a spatula or spoon to evenly glaze the cake. You can decorate it as you wish, using lemon slices, candied fruits, or even chopped nuts. This way, you will achieve a dessert that is not only tasty but also visually appealing. Enjoy it alongside a cup of tea or coffee!
