Although it may seem like a difficult task, making pastry sheets at home is a true art, and the results are worth it. Moreover, you have the freedom to fill the pastry with ingredients you like, whether you prefer a savory or a sweet filling.

To prepare the pastry sheets, you need a few essential ingredients: flour, water, oil or butter, and a pinch of salt. In a large bowl, mix 500 g of flour with a pinch of salt, then gradually add 200 ml of warm water and 50 ml of oil. Knead the dough until it becomes elastic and homogeneous. Cover it with a clean towel and let it rest for 30 minutes. This step is crucial as it allows the gluten to relax, making it easier to roll out the sheets.

After the dough has rested, divide it into 10 equal-sized balls. Take each ball and roll it out on a well-greased surface using a rolling pin. Aim to obtain the thinnest sheets possible, but be careful not to tear them. If desired, you can sprinkle a little flour on the table to prevent sticking. Once you have the sheets, it’s time to fill them.

For a savory filling, you can use cottage cheese, feta cheese, or spinach mixed with eggs and spices like dill or pepper. If you prefer something sweet, an apple filling with cinnamon, or a combination of nuts and sugar, will turn the pastry into an irresistible dessert.

After filling, carefully roll the sheets, making sure not to spill the filling. Place the pastry in a greased baking tray and bake it in a preheated oven at 180 degrees Celsius for about 30-40 minutes, until it becomes golden and crispy.
