To prepare these delicious jam cookies, the first step is to make the dough. In a large bowl, carefully mix the flour, cold diced butter, sugar, and eggs. Once the dough has chilled, we take it out of the refrigerator and prepare to roll it out. We sprinkle a clean surface with a little flour and, using a rolling pin, roll the dough into a sheet about 3-5 mm thick. It is important not to roll it too thin, to ensure that the cookies will remain tender and fluffy. Once we have the dough sheet, we use a cutter or a glass to cut out circles with a diameter of 6-8 cm.

Each dough circle will hold a small teaspoon of jam, preferably a flavored one, such as apricot or blackberry jam, but the choice is up to each person, depending on personal preferences. We place the jam in the center of each circle and carefully fold the dough in half, forming a semicircle. It is essential to press the edges with our fingers to seal the cookies well, so the jam does not leak during baking.

After we finish filling all the circles, we preheat the oven to 180 degrees Celsius. We prepare a baking tray by lightly greasing it with butter or lining it with parchment paper to prevent the cookies from sticking. We carefully place the cookies on the tray, leaving enough space between them, as they will rise slightly while baking. We bake the cookies for about 30 minutes, until they become golden and slightly browned at the edges.

After taking them out of the oven, we let them cool slightly, then dust them with powdered sugar, giving them an elegant appearance and a sweet taste that will delight any dessert lover. These jam cookies are perfect to be served alongside a cup of tea or coffee, being ideal for both a relaxing afternoon and a special occasion. Enjoy them with pleasure!
