To prepare a delicious cocoa cake, start by carefully separating the eggs, ensuring that no yolk gets into the whites. In a clean bowl, beat the egg whites with a mixer on medium speed until they become frothy and firm, making sure to achieve a fluffy consistency. Once the egg whites are beaten, you can start making the sugar syrup. In a saucepan, combine the sugar with water and put the mixture over low heat. Stir occasionally until the sugar completely dissolves and you obtain a clear syrup that begins to boil. This is the stage where the hot syrup will be added over the beaten egg whites.

Once the syrup is ready, carefully pour it over the egg whites, continuing to mix on high speed for about a minute. This will allow the syrup to integrate perfectly and provide a fluffy texture to your cake. After the syrup is incorporated, gradually add the oil while continuing to mix. This stage will add moisture and richness to the cake. Once the oil is well incorporated, add the yolks one at a time, ensuring that each yolk is well mixed before adding the next.

Next, dissolve the baking powder in a little warm water and add it to the mixture. This will help the cake rise beautifully during baking. Start gradually incorporating the flour, mixing with a spatula or with the mixer on low speed until you obtain a homogeneous mixture without lumps. Now, it's time to prepare the baking pan. Grease a baking dish with butter or margarine, making sure it is well covered to prevent sticking.

Keep a portion of the mixture to add cocoa. In a separate bowl, mix the cocoa with a little warm water until you obtain a smooth paste.
