Sour cherry jam in a multicooker

Dessert - Sour cherry jam in a multicooker by Ana B. - Recipia

Sour cherry jam in a multicooker cooks for an hour on the JAM program, after the fruit sits with the sugar and releases its juice. The syrup thickens around the sour cherries, and the lemon juice goes in near the end. I choose ripe but still firm sour cherries, so I can pit them without crushing them. Prep: 30 minutes. Cook: 60 minutes. Rest: 60 minutes. Total time: 150 minutes. Servings: 30. Approximately 88 kcal and 0.4 g protein per serving.

Ingredients

  • 1500 g whole sour cherries (approximately 1000 g pitted)
  • 500 g sugar
  • 2 tablespoons lemon juice

Preparation

1. Wash the sour cherries, remove the stems and pit them. Put the fruit in the multicooker’s large pot and add the sugar. Leave them for 60 minutes to release their juice. 2. Plug in the appliance, select the JAM program (jam) and set the time to 60 minutes. Leave the lid open and keep an eye on the pot. 3. When foam forms, skim it off with a spoon. Once no more forms, add the lemon juice and stir. At the end of the program, put a little jam on a plate and check whether it sets. 4. Pour the jam into clean, drained jars. Wrap the jars in a blanket and let them cool gradually.

Notes

Well-ripened sour cherries without bruised spots make a richer syrup, while very soft ones break down more during cooking. If the fruit is unusually juicy, the drop on the plate may still be runny after the program. I plan the cooking before dinner, since I need to be nearby while the foam forms. On toast, it’s just as easy to eat as strawberry jam, except the sour cherries keep a tangy note. After opening, I keep the jar in the fridge and use the jam within 3 days. For a batch with frozen sour cherries, thaw and drain the fruit, then weigh 1500 g before putting it in the pot. Keep the 500 g of sugar and let the fruit release its juice before starting the appliance. The foam can come close to the rim of the pot, so I stay near the multicooker while the program runs.

Frequently asked questions

How can I tell if the jam has set?

Put a teaspoonful on a cold plate and leave it for 3 minutes; the cooled syrup should move slowly when you tilt the plate.

What should I do if it’s still too runny?

Run the JAM program again for 10 minutes with the lid open, then check it on the plate again.

Can I use sweet cherries instead of sour cherries?

Yes, use 1000 g of pitted sweet cherries. The jam will be sweeter and less tangy, so keep the 2 tablespoons of lemon juice.
