To prepare delicious dried figs, the first step is to carefully select the fruits. It is essential to look for beautiful, well-ripened figs, with no signs of bruising or damage. These will ensure a superior quality of the final product. Once we have selected the figs, we wash them carefully under a stream of cold water, being careful not to bruise them, as their delicacy may be compromised.

After washing, we take a skewer and prick them in a few strategic places. This step is important as it allows the fruits to dry evenly, helping to eliminate moisture from the inside. Once prepared, we place them on the drying machine's trays, ensuring that each fig is placed so that they do not touch each other. It is good to slightly flatten them by pressing each fig with the palm of our hand, so that we obtain a uniform and compact shape, which will facilitate drying.

After completing all the trays, we turn on the fruit dryer. It is recommended to let the figs dry for two days and two nights or until they become chewy and soft to the touch. It is important to check the progress from time to time to ensure that the drying is done optimally. Once the fruits are ready, we take them out of the machine and let them cool at room temperature.

To store them, we use cardboard boxes, as they allow for easy ventilation, a crucial aspect in preventing mold formation. It is good to place the figs between paper towels, which will absorb excess moisture. We avoid plastic or metal boxes, as they do not allow air circulation, which can lead to fruit deterioration.
