These donuts remind me of my grandmother. She used to make them on winter evenings when the house was full of uncles, aunts, nephews, neighbors... What beautiful memories! These fluffy and aromatic delights are perfect to enjoy with loved ones, and the preparation process is a real pleasure.

To start, we take care of the yeast, the essence of this soft and fluffy dough. In a bowl, we mix the fresh yeast with 100 ml of warm milk and 2 tablespoons of flour. We cover the bowl with a clean towel and let it rise for about 10-15 minutes until a foam forms on top. This is the sign that the yeast is active and ready to help us make the most delicious donuts.

In the meantime, we take care of the egg yolks. We sprinkle them with a pinch of salt and mix them with sugar until it completely dissolves, and the mixture becomes a fine and bright cream. In a large bowl, we put the sifted flour, the previously obtained yeast mixture, and the mixed egg yolks. We start kneading the dough, gradually adding the rest of the warm milk. Once the dough becomes homogeneous and separates from our hands and the bowl, we alternately incorporate the melted butter and oil, mixing patiently.

At the end, we add the vanilla essence, which will give our donuts an inviting aroma. We continue to knead the dough well for a few minutes, then cover it with a towel and let it rise in a warm place for about an hour or until it doubles in volume.

After the dough has risen, we prepare to shape the donuts. We flour the work surface and roll out a sheet of dough that is not too thin. On one side of the sheet, we neatly place dollops of delicious jam, preferably plum or apricot, then cover it with the other side of the dough sheet. We gently press to seal the jam inside and use a glass or a special cutter to cut out the donuts. We proceed the same way until we finish all the dough, and we place the cut donuts on a tray, letting them rise for another 15 minutes.

In a deep pan, we heat the oil until it reaches the optimal temperature for frying. We carefully place the donuts in the hot oil, frying them on each side until they become golden and crispy. We remove them with a spatula and place them on an absorbent napkin to eliminate excess oil. Finally, we dust the donuts with sugar and enjoy the unmistakable aroma that will remind us of the evenings spent with loved ones. Enjoy your meal!
