DOUGH 450 g of butter is mixed with 150 g of sugar, then 8 egg yolks are added one by one. 425 g of flour is mixed with 2 teaspoons of baking powder and a pinch of salt. 150 ml of buttermilk is mixed with 2 teaspoons of vanilla essence and 1 teaspoon of almond essence. The flour and buttermilk are alternately added to the butter mixture. 8 egg whites are whipped to stiff peaks with 175 g of sugar. This is added to the first mixture, homogenized, and poured into a greased and lined baking tray. Bake at low heat (330 F or 170 C) for one and a half hours. Halfway through the baking time, cover the dough to prevent it from burning. A toothpick test is done to know when it's ready.
