Coconut chocolate cake

Coconut chocolate cake: Beaten egg whites keep the cake fluffy, with pralines arranged in circles. The cultured buttermilk and cinnamon batter stays simple, and the candies show in each slice without overpowering the cake flavor. I cut it into narrow slices and eat it cold, so every slice gets some of the chocolate circles. Prep: 20 minutes. Cook: 35 minutes. Rest: 45 minutes. Total time: 100 minutes. Servings: 8. About 195 kcal and 7 g protein per serving.

Ingredients

  • 6 eggs
  • 6 tablespoons sugar
  • 6 tablespoons cultured buttermilk
  • 9 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 12 coconut chocolate candies

Preparation

1. Separate the egg whites from the yolks. Beat the yolks with the sugar, then add the cultured buttermilk and whisk until smooth. 2. Gradually fold in the flour and cinnamon. In a separate bowl, beat the egg whites with the salt until stiff peaks form. 3. Gently fold the egg whites into the yolk mixture. Pour the batter into a round 24 cm springform pan lined with baking paper. 4. Arrange the candies in a circle no more than 1 cm from the edge, then make a second circle inside it and put the remaining candies in the middle. 5. Bake in a preheated oven at 180 °C for 35 minutes, until the cake is browned and the middle is set. Leave it to cool for 45 minutes before cutting it into portions.

Notes

I used the candies I wanted to use up in circles; you can use 120 g chopped walnuts instead. Contains eggs, dairy and gluten; the walnut version also contains nuts. A slice goes well with black tea. Cultured buttermilk taken out of the fridge 15 minutes beforehand mixes more easily with the yolks, and large pralines can be cut in half. A springform pan makes it easier to remove the cake. Keep it covered in the fridge for no more than 3 days.

Frequently asked questions

Can I make muffins with the same batter?

Yes. Divide the batter between 12 muffin cups and bake for 18-20 minutes at 180 °C, until lightly browned.

Why did the cake turn out dense?

The egg whites need to be beaten until stiff peaks form. Fold them in in two batches, without mixing vigorously.

Can I use chopped chocolate instead of candies?

Yes. Add 12 squares of chocolate, about 8 g each; they will melt into the batter and won’t keep their round shape.

Do pralines with a soft filling work?

Yes, but chill them for 20 minutes before arranging them in the batter, so they’re easier to handle.
