Do you want a dessert that is not only delicious but also easy to prepare, perfect for hot summer days? The cold dessert with cheese and raspberries is the ideal choice! It will not only refresh your taste buds but also delight the little ones, turning cooking into a fun family activity.
Necessary ingredients:
- 250 g cottage cheese (or mascarpone for a creamier taste)
- 200 ml whipping cream
- 100 g powdered sugar (you can adjust according to your preferences)
- 1 teaspoon vanilla extract
- 250 g fresh raspberries (or frozen, out of season)
- Biscuits (about 150 g, digestive or vanilla type)
- 50 g melted butter (to bind the biscuit crust)
Step-by-step preparation:
1. Preparing the crust: Start by grinding the biscuits in a food processor or crushing them in a bowl with a rolling pin. Add the melted butter and mix well until the mixture becomes homogeneous. This will form the delicious base of your dessert.
2. Forming the base: In a springform cake pan, add the biscuit mixture and press it down with a spatula to create an even crust. Make sure it is well compacted, so it does not disintegrate when cut.
3. Preparing the cheese filling: In a large bowl, combine the cottage cheese with the powdered sugar and vanilla extract. Mix with an electric mixer until you obtain a smooth cream. In another bowl, whip the cream until it becomes firm, then gently fold it into the cheese mixture using a spatula.
4. Adding the raspberries: Add the raspberries to the cheese filling and gently mix, being careful not to crush the fruit. They will add a fresh note and vibrant flavor to your dessert.
5. Assembling the dessert: Pour the cheese filling over the prepared biscuit crust. Spread it evenly with a spatula and ensure it is well distributed.
6. Cooling: Cover the pan with plastic wrap and let the dessert chill in the refrigerator for at least 2 hours. This step is essential to allow the dessert to set and achieve a perfect texture.
7. Serving: After the cooling time has expired, remove the dessert from the refrigerator. You can decorate it with some fresh raspberries or a raspberry sauce made from raspberry puree and a spoonful of sugar for an extra flavor boost. Cut into servings and enjoy every bite!
Useful tips:
- If you want a less sweet version, you can reduce the amount of sugar. You can also replace the raspberries with other seasonal fruits, such as strawberries or peaches.
- For a dessert with a more intense flavor, add a few fresh mint leaves to the filling.
- This recipe is perfect for making together with children, turning cooking into a pleasant and educational activity.
This cold dessert recipe with cheese and raspberries is not only simple but also refined, bringing a touch of elegance to summer days. Enjoy this delicacy with your loved ones and let yourself be carried away by its flavors!

Ingredients
150 grams of digestive biscuits, 70 grams of melted butter (my biscuits were fattier, so less butter would have worked), 2 tablespoons of granulated sugar, 1 packet of vanilla sugar, 1/2 teaspoon of grated orange peel (I used Finesse from Dr. Oetker), 4 full tablespoons of Quark cheese with 0.2% fat, 120 grams of fresh cheese (frischkäse from Mega Image, comes in a pack of 6 containers of 60 grams each - I used 2 containers), 1 teaspoon of granulated gelatin from Dr. Oetker, 2 handfuls of fresh raspberries, chocolate for decoration.
