Desert - Coffee Chocolate in a Glass by Mariuca C. - Recipia
To prepare a delicious dessert that will surely impress everyone who tastes it, we will start by gathering all the necessary ingredients. You will need good quality dark chocolate, strong coffee, fresh egg yolks, vanilla sugar, unsalted butter, egg whites, and granulated sugar. Make sure all the ingredients are at room temperature for the best results.

In a small saucepan, add the broken chocolate pieces along with the freshly brewed coffee. Place the saucepan over low heat, stirring constantly to prevent the chocolate from burning. When the mixture becomes smooth and silky, remove the saucepan from the heat. At this point, add the egg yolks and vanilla sugar, mixing well to integrate all the ingredients. Then add the cubed butter, continuing to stir until it melts completely and the cream becomes smooth and shiny.

In a separate bowl, beat the egg whites with a mixer until stiff peaks form. Make sure the bowl is clean and dry, as any trace of fat can prevent the egg whites from whipping well. In a small saucepan, combine the sugar with water and place the mixture over heat. Allow it to boil until it reaches a temperature of about 115°C, forming a syrup. When the syrup is ready, carefully pour it over the whipped egg whites while continuing to mix at high speed. This will create a shiny and firm meringue that will add air and volume to our preparation.

Once the syrup is fully incorporated, carefully add the meringue over the chocolate mixture, which should be warm but not hot. Use a spatula and gently fold with up-and-down movements to preserve the air in the meringue. This step is crucial, as the air in the meringue will make the dessert fluffy and light.

Once the mixture is homogenized, pour it into individual glasses or cups. Cover them with aluminum foil to prevent a crust from forming and to retain moisture. Place the glasses in the refrigerator and let them cool overnight. The next day, when the dessert has completely cooled and set, you can serve it plain or with a topping of whipped cream, fresh fruits, or chocolate flakes. This recipe is perfect for any occasion and will leave an unforgettable impression. Enjoy every spoonful of this delight!
