To prepare a delicious chocolate and almond cake, we start by grinding the almonds. It is important to achieve a fine texture, but not so fine that it becomes a paste. Once the almonds are ground, we turn our attention to the butter. In a large bowl, we beat the butter with sugar until we achieve a fluffy and light consistency. This is the perfect base for our cake.

We separate the egg yolks from the egg whites, being careful not to leave any trace of yolk in the whites, as this will affect the consistency of the foam. We incorporate the yolks into the butter and sugar mixture, gently mixing to avoid losing air in the mixture. In another container, we melt the chocolate in a bain-marie, being careful not to overheat it, in order to preserve the fine texture and intact flavors. Once melted, we add two tablespoons of strong coffee to enhance the chocolate flavor.

We add the melted chocolate to the butter and egg mixture, followed by the breadcrumbs, ground almonds, and baking powder. We mix everything carefully, ensuring that the ingredients combine perfectly. In another bowl, we beat the egg whites until they form a firm foam. Here it is important to be patient, as well-beaten foam will give the cake a fluffy texture. We fold the egg whites into the chocolate mixture, gently stirring to keep the air in the foam.

We pour the resulting batter into a lined cake pan and place it in the preheated oven at 180 degrees Celsius. We let it bake for about 30-40 minutes. When the cake is ready, we take it out of the oven and let it cool completely. Using a wooden skewer, we gently poke it to allow the syrup to seep in. We prepare a syrup from the mixture of coffee, melted chocolate, and rum essence, which we pour evenly over the cake.

To finish our creation, we prepare the two chocolate glazes according to the instructions on the package. We pour the glaze over the cake, making sure to evenly cover the entire surface. Finally, we decorate with chocolate flakes, which we obtain using a vegetable peeler, to add an elegant and appetizing look. Our almond and chocolate cake is now ready, a true delicacy that will delight any sweet lover!

Ingredients

200 grams of ground almonds, 100 grams of butter, 150 grams of sugar, 4 eggs, 100 grams of dark chocolate, 1 cup of coffee in which I added some chocolate squares and rum essence, 1 teaspoon of breadcrumbs, 1/2 packet of baking powder, 2 packets of chocolate glaze, chocolate for decoration.
