While the dough rests, we focus on preparing the filling. In a large bowl, we beat the egg yolks with the sugar, using a mixer or spatula, until we obtain a whitish and frothy cream. Once we have achieved this consistency, we melt the butter in a saucepan, being careful not to let it get too hot. After the butter has melted, we add the milk, flour, and cocoa, mixing well to avoid lumps.

After we have homogenized the mixture, we add the grated coconut, which will provide an extra flavor and texture to our preparation. We continue to mix, then incorporate the egg yolk and sugar mixture. Finally, we fold in the whipped egg whites, which will bring a lightness to the filling. Even if the egg whites are not perfectly beaten, they will contribute to a lighter texture.

Now, we return to the dough. From the portion of dough that was resting, we take 3/4 and roll out a thin sheet, which we carefully place at the bottom of the cake pan that we have greased with butter or lined with parchment paper. It is important that the dough evenly covers the base to prevent leaks.

After we have placed the dough sheet, we carefully pour the cocoa and coconut cream, making sure to distribute it evenly. After that, we take the remaining dough and cut it into thin strips, which we place over the filling, forming a lattice pattern. This will not only give an attractive appearance but will also help the tart bake evenly.

We preheat the oven, setting it to a temperature of 180-200 °C, and place the tart inside, allowing it to bake for about 30 minutes. It is important to pay attention to the baking progress to ensure that the tart becomes golden and appetizing. Once the time is up, we take the tart out of the oven and let it cool. After cooling, we can enjoy a delicious slice, admiring the transformation of simple ingredients into a refined dessert. Now all that is left is to enjoy every bite!
