To prepare these delicious cheese-filled danishes, we start by preheating the oven to 200 degrees Celsius. It is essential that all ingredients are at room temperature to achieve a perfectly homogeneous mixture. In a large bowl, we add the cream cheese, sugar, sour cream, lemon juice, the whole egg, and vanilla extract. We mix these ingredients on low speed with a mixer for about a minute until we achieve a soft, even mixture without lumps.

Meanwhile, we prepare to work with the pastry sheets. On a clean wooden surface, we sprinkle a little flour to prevent the dough from sticking. We take a sheet of pastry and place it on the work surface. Using a rolling pin, we gently roll out the sheet just to give it a more even shape and make it easier to handle. After rolling out the sheet, we cut it into six equal squares. Each square will become a vessel for our delicious filling.

On each square of dough, we add a tablespoon of the cheese mixture, being careful to leave a small space around the edges. This will help seal the corners. We brush the edges of each square with a mixture of egg yolk and water, acting as a natural adhesive. Now we take the opposite corners of each square and pinch them together with our fingers, forming a small cheese pouch. It is important to seal well to prevent the filling from leaking during baking.

After we have finished shaping all the danishes, we let them chill for about 15 minutes. This will help the dough maintain its shape. Before placing them in the oven, we carefully brush the surface of each danish with the egg and water mixture to achieve a golden and shiny crust. Then, we carefully place them on a baking sheet lined with parchment paper, ensuring they are spaced apart to allow for expansion.

We bake the danishes in the preheated oven for about 20-25 minutes or until they become nicely browned. When they are ready, we take them out of the oven and let them cool slightly. Finally, we dust each danish with powdered sugar, giving them an elegant and appetizing appearance. These delicious pastries can be served warm or at room temperature, making them perfect for a special breakfast or a sweet snack between meals. Enjoy them alongside a cup of coffee or tea!
