To prepare a delicious cheesecake with cherries, we start by activating the yeast. We mix 25 grams of fresh yeast with 250 milliliters of warm milk and a tablespoon of white flour. We let this mixture sit in a warm place, away from drafts, for about 10-15 minutes, until we notice that the yeast becomes frothy and doubles in volume. This is a sign that the yeast is active and ready to use.

In a large bowl, we put the rest of the ingredients for the dough: 500 grams of flour, 100 grams of sugar, 100 milliliters of sunflower oil, two eggs, and a pinch of salt. We add the yeast mixture and start kneading the dough until it becomes smooth and elastic. It is important to knead well so that the dough reaches the desired consistency. After we finish kneading, we cover the bowl with a clean towel and let the dough rise for about 30 minutes in a warm place until it doubles in volume.

Meanwhile, we take care of the cherries. We remove the pits from 300 grams of fresh or frozen cherries and let them drain well to avoid excess moisture in the cake. In another bowl, we prepare the cheese mixture: we mix 400 grams of cottage cheese (or ricotta), two eggs, 100 grams of sugar, the grated zest of one lemon, and a pinch of salt. It is essential to mix the ingredients well so that the mixture is homogeneous and has no lumps.

After the dough has risen, we preheat the oven to 180 degrees Celsius. We roll out the dough in a greased baking tray or lined with parchment paper, forming an even base. On top of the rolled-out dough, we add the cheese mixture, making sure to distribute it evenly. We then place the drained cherries on top, sprinkling them lightly to incorporate into the cheese mixture.

We place the tray in the preheated oven and bake the cake for about 30 minutes, making sure to check its status from time to time. The cake is ready when the dough is golden brown on the bottom and the cheese mixture is firm. After removing the cake from the oven, we let it cool completely on a rack.

To finish, we prepare the two packets of jelly according to the instructions on the package and pour the gelatin over the cooled cake. We let the cake chill in the refrigerator for a few hours so that the gelatin sets.
