We start the culinary adventure with our delicious fluffy pancake recipe, perfect for a savory breakfast or a sweet snack. The first step is to prepare the basic ingredients. In a large bowl, we add 250 grams of flour, which will form the structure of our pancakes. Then, we add 10 grams of baking powder, an essential ingredient for achieving a fluffy texture. It is important to mix these dry ingredients well to ensure that the baking powder is evenly distributed in the batter.

After obtaining a homogeneous mixture, we gradually add 300 milliliters of fresh milk, preferably at room temperature, to facilitate mixing. We continue with 3 egg yolks, which add flavor and a beautiful color to the pancakes. We use a whisk or spatula to mix everything until we achieve a smooth and homogeneous batter, without lumps.

In another bowl, we focus on the egg whites from the 3 eggs. We add a pinch of salt and beat them vigorously with a mixer until we obtain a firm and glossy foam. This step is crucial because the whipped egg whites will add air and volume to our pancakes. When the foam is ready, we start to gradually incorporate it into the pancake batter using a spatula and circular motions, from top to bottom, to avoid losing the air from the egg whites.

While the batter rests a bit, we place a non-stick frying pan over medium heat. We wait for it to heat up well, then add a tablespoon of oil, distributing it evenly over the entire surface. For each pancake, we use about 4 tablespoons of batter. We pour the batter into the pan and let it fry for 2-3 minutes or until the edges start to lift slightly and the surface becomes firm. Then, using a spatula, we flip the pancake to the other side and fry it for another 1-2 minutes.

We continue to repeat the process until we finish all the batter, ensuring that each pancake is beautifully browned and fluffy. In the end, we can serve the pancakes with a variety of toppings, such as jams, maple syrup, fresh fruits, or whipped cream, to turn every bite into a delicious experience.
