The cookies are finely crushed, either using a food processor or by hand, placing them in a bag and crushing them with a rolling pin. They form the delicious base of our cake. Once crushed, melted butter is added, which will give them a creamy texture and rich flavor. If you choose honey, it will add a floral note, while sugar will provide a classic sweetness. Mix well until the cookies are completely coated in butter and sweetener.

In a separate bowl, the cottage cheese is mashed with a fork, being careful not to leave large chunks. This will be the main filling, bringing a creamy note and a slightly salty taste that will perfectly contrast with the sweetness of the fruits. The rest of the ingredients, such as vanilla, sour cream, or yogurt, depending on preferences, are added to the mashed cheese, and mixed well until homogeneous. Finally, whipped cream is gently folded in, being careful to maintain its airiness for a fluffy and light filling.

For the berry compote, the fruits are placed in a saucepan along with honey and wine. They are brought to a boil over medium heat, stirring occasionally, until the juice significantly reduces and the fruits become more concentrated. This sauce will provide a vibrant and aromatic note to the cake, bringing an explosion of flavor with every slice.

To assemble the cake, a detailed mold is prepared, either silicone or with a removable bottom, which will facilitate the removal of the cake. First, the cookie mixture is added, pressing it well into the bottom of the mold to form a solid base. Then, the cheese filling is carefully poured, leveling it evenly. On top, the berry compote is added, distributing it evenly to create an attractive appearance.

The cake is left in the refrigerator for at least a few hours, ideally overnight, to set and allow the flavors to meld. When ready to serve, it can be decorated with some fresh fruits or mint leaves, adding a touch of freshness. Base: 300 g digestive biscuits, 1/2 pack margarine, 2 tablespoons sugar. Filling: 300 g cottage cheese, a small yogurt, 2-3 tablespoons sugar or honey, vanilla sugar, raisins, juice and zest from 1/2 lemon, a packet of whipped cream with milk. Topping: frozen berries (about 1/4 bag), a glass of wine, and 2 tablespoons of honey.
