Grease and flour a tall round pan with a diameter of 20 cm. This is the first essential step in preparing a delicious tart that will delight everyone's taste buds. The dough is the base of our recipe and must be perfect to support the juicy apple filling.

To prepare the dough, sift the flour together with the baking powder in a large bowl, ensuring there are no lumps. Add the salt, sugar, and vanilla sugar, then add the butter cut into small pieces. Using your fingers, mix the ingredients until you get a crumbly mixture, similar to wet sand. This is a crucial step as the butter needs to be well incorporated into the flour to achieve a tender texture.

In another bowl, beat the egg with cold milk, then pour the mixture over the dry ingredients. Gently knead the dough until all the ingredients are combined. Avoid over-kneading, as this can lead to a less tender tart. Once the dough is well combined, wrap it in plastic wrap and refrigerate for at least 30 minutes.

In the meantime, let’s prepare the filling. In a saucepan, place water, cinnamon, and half of the sugar over medium heat, stirring constantly until the sugar is completely dissolved. Add the diced apples, mix well, and let them simmer, covered, for about 20 minutes or until they become soft but not mushy. Once the apples are cooked, let them cool and drain the juice, keeping the liquid for the final sauce.

Add the remaining sugar, grated orange zest, cinnamon, nutmeg, cloves, and cornstarch to the cooled apples and mix well to combine the composition. Now we are ready to assemble the tart! Remove the dough from the fridge and roll out ¾ of it into a round sheet that will cover the bottom and sides of the prepared pan. Pour the apple mixture inside, leveling it evenly, then roll out the remaining dough, covering the filling. Seal the edges of the two sheets of dough well, ensuring that the filling will not leak during baking. Brush the tart with a mixture of beaten egg and water to achieve a golden and appetizing crust.

Bake the tart in a preheated oven at 180 degrees Celsius for about 45-55 minutes, or until it is golden brown and baked. Once it’s ready, remove it from the pan and let it cool on a wire rack.

To prepare the sauce, place the reserved liquid from the apples in a saucepan, adding orange juice and milk. Separately, dissolve the cornstarch in a little cold water and add it to the pot. Let it simmer on low heat, stirring continuously, until the sauce thickens. Finally, add the butter, which will give a rich and creamy taste to the sauce.

Serve the sliced tart along with the apple sauce, providing a refined and savory dessert, perfect for any occasion. This dish not only looks wonderful, but its taste will leave an unforgettable impression. Enjoy your meal!
