Watermelon granita

Dessert - Watermelon granita by Hortensia E. - Recipia

Watermelon granita forms fine flakes if you scrape it with a fork as it freezes. Watermelon puréed with powdered sugar and lemon becomes a cold dessert with light flakes and a texture close to shaved ice, but with the fruit’s flavor in every spoonful. I serve it in small chilled glasses. Prep: 10 minutes. Cook: 0 minutes. Rest: 4 hours. Total time: 4 hours and 10 minutes. Servings: 4. About 136 kcal and 1 g protein per serving.

Ingredients

  • 500 g watermelon flesh
  • 100 g powdered sugar
  • Juice of 1/2 lemon

Preparation

1. Put the watermelon flesh, powdered sugar and lemon juice in a bowl. Blend with an immersion blender until smooth. 2. Pour the mixture into a wide, shallow tray. Put it in the freezer for 4 hours and scrape the mixture with a fork every 30 minutes, until fine crystals form. 3. Serve the granita in small cups or glasses that have been chilled beforehand.

Notes

A ripe watermelon with fragrant red flesh gives the clearest flavor; if it is bland, the granita will be less fragrant. Remove the seeds before blending, as the blades can break them up and you will feel them among the crystals. A wide, shallow tray helps the mixture freeze evenly. Keep the dessert covered in the freezer, and if it gets very hard, scrape it again before serving. Serve it with a few plain biscuits.

Frequently asked questions

Why does it stay hard, like a block?

Leave it at room temperature for 5 minutes, then scrape it with a fork until it breaks up into crystals.

Can I use granulated sugar instead of powdered sugar?

Yes, use 100 g of very fine granulated sugar and blend until you can no longer feel the crystals.

Can I make it with cantaloupe too?

Yes, replace the watermelon with 500 g of ripe cantaloupe flesh.
