Nutella-filled fried bananas

Dessert - Nutella-filled fried bananas by Eleonora E. - Recipia

The scooped-out spots stay on just one side, because the pieces break easily. Nutella-filled fried bananas have a Nutella center and a coating of flour, egg and breadcrumbs, then they’re rolled in cinnamon sugar. I eat them while they’re still warm, with just a thin coating of sugar. Prep: 20 minutes. Cook: 8 minutes. Total time: 28 minutes. Servings: 4. About 340 kcal and 6 g protein per serving.

Ingredients

  • 4 bananas
  • 30 g Nutella
  • 50 g flour
  • 1 egg
  • 60 g breadcrumbs
  • 500 ml oil
  • 50 g sugar
  • 1/2 teaspoon cinnamon

Preparation

1. Trim the ends off the bananas, then cut them into 4-5 cm pieces. I used a sharp-tipped knife to make the cavities, only on one side; the pieces break easily. 2. Put about 1/2 teaspoon of Nutella into each cavity. 3. Roll the pieces in flour, dip them in the beaten egg, then coat them in breadcrumbs. 4. Mix the sugar with the cinnamon. In a small saucepan, heat the oil for 5 minutes over medium-high heat. Fry the pieces in 4 batches, 45 seconds each, until the coating is lightly golden. Turn them in the oil so they brown on all sides. 5. Roll the warm bananas in the cinnamon sugar.

Notes

For a gluten-free version, replace the flour with 50 g rice flour and the breadcrumbs with 60 g gluten-free breadcrumbs. Nutella contains hazelnuts and milk, and the coating contains gluten and egg. Stored in a container in the fridge, the pieces keep for up to 3 days, but the breadcrumbs soften; I wouldn’t make them ahead. I serve them with black tea. Choose yellow bananas that are still firm when pressed; very soft ones break easily when you scoop them and get crushed as you roll them. A saucepan about 16 cm wide keeps the oil deep enough for the short pieces. Sometimes Nutella comes through the coating if the cavity pierces the banana.

Frequently asked questions

Why do the pieces break when I scoop them?

Leave about 5 mm of whole banana at the bottom of each cavity. Scoop out the center gradually with the tip of the knife.

What should I do if Nutella comes out while frying?

Put no more than 1/2 teaspoon in each piece, and don’t make the cavity all the way through.

How can I tell if the oil is hot enough?

Drop a breadcrumb into the oil; it should sizzle immediately. The right temperature is around 175 °C.

Can I use chocolate instead of Nutella?

Yes, you can put a small square of chocolate, about 5 g, in each cavity if it fits without splitting the banana.
