Cold brew coffee granita is a refreshing summer treat that combines the rich flavors of coffee with a light, icy texture. Perfect for hot days, this easy recipe requires minimal effort and offers a unique twist on your regular iced coffee.

Preparation

1. Prepare the cold brew coffee by combining 2 cups of coarsely ground coffee with 4 cups of cold water in a large jar or pitcher. Stir gently, cover, and let it steep in the refrigerator for 12-24 hours.
2. Strain the coffee through a fine-mesh sieve or a coffee filter to remove the grounds, leaving you with a smooth cold brew concentrate.
3. In a medium saucepan, combine 1 cup of the cold brew concentrate with 1/2 cup of sugar. Heat over medium-low, stirring until the sugar dissolves completely. Remove from heat and let it cool to room temperature.
4. Add 1 teaspoon of vanilla extract to the cooled coffee syrup and mix well.
5. Pour the coffee mixture into a shallow baking dish or a large freezer-safe container. Place it in the freezer.
6. After 1 hour, use a fork to scrape the icy edges into the center. Repeat this scraping every 30 minutes for about 2-3 hours, until the mixture forms fluffy, coffee-flavored ice crystals.
7. Once fully frozen and granulated, serve the granita in chilled glasses. Optionally, top with whipped cream or a dusting of cocoa powder for an elegant touch.
