Mashed potatoes

Children - Mashed potatoes by Ioana L. - Recipia

Mashed potatoes are made by mashing potatoes with milk and margarine, and turn out fluffy and creamy. Oil and salt go into the mix, with tomato paste and parsley on top; I serve it simply, without smoothing it until it turns glossy. I serve it alongside roast meat and leave it thick enough to hold its shape on a spoon. Prep: 10 minutes. Cook: 20 minutes. Total time: 30 minutes. Servings: 4. About 240 kcal and 6 g protein per serving.

Ingredients

  • 6 medium potatoes (900 g)
  • 1500 ml water
  • 150 ml milk
  • 20 g margarine
  • 1 ml oil
  • 1 teaspoon salt
  • 15 g tomato paste
  • 5 g parsley

Preparation

1. Peel the potatoes, cut them into similar-sized pieces and put them in a pot with 1500 ml water. Boil for 20 minutes, until a fork slides into them easily. 2. Drain the potatoes and put them in a bowl. Mash them with the milk, margarine, oil and salt until you have a fluffy, creamy mash. 3. Divide the mash into portions and garnish with tomato paste and parsley.

Notes

Floury potatoes mash easily, while waxy ones make a denser mash. If they’re cut into large pieces, they may take more than 20 minutes to cook; I check them with a fork and don’t rush the mashing while they’re still hot. I time it to the meal and double the quantities when I’m cooking for more people; it keeps in the fridge for up to 3 days. I serve it with browned meat or roasted vegetables. You can swap the margarine for 20 g butter, and the milk contains dairy.

Frequently asked questions

What if the mash is too thick?

Stir in 15 ml warm milk at a time until it softens, mixing after each addition.

What if some pieces are still hard?

Put the potatoes back on to boil for another 5 minutes before mashing them, then check them with a fork.

How do I reheat the mash the next day?

Put it in a saucepan over low heat and stir it for 3 minutes with 30 ml milk.
