Sărățele, Romanian sesame pastry sticks

Sărățele are Romanian sesame pastry sticks. Parmesan and sesame turn golden on top of the puff pastry, ready in 15 minutes at 180°C. The pastry puffs up and browns at the edges, while the short pieces stay crisp and slightly crumbly. I prefer to leave the sesame in a looser layer so you can see the Parmesan too. Preparation: 10 minutes. Cooking: 15 minutes. Total time: 25 minutes. Servings: 6. Approximately 420 kcal and 10 g protein per serving.
Ingredients
- 1 package puff pastry
- 100 g Parmesan
- 20 g sesame seeds
Preparation
1. Heat the oven to 180°C. Lay the puff pastry out on your work surface. 2. Sprinkle the Parmesan and sesame over the pastry. Cut it into strips about 2 cm wide, then make them shorter as you like. I cut mine to about 5 cm. 3. Line a baking tray with parchment paper and arrange the sticks on it. Bake for about 15 minutes, until golden.
Notes
You can replace the sesame with 20 g poppy seeds; the puff pastry contains gluten, the Parmesan contains dairy, and sesame is an allergen if you use it. Let the pastry thaw just enough to unfold without tearing it, but work with it while it still feels cold to the touch. If it gets soft and sticky after you roll it out, put it in the fridge for a few minutes before continuing. Finely grate the Parmesan and gently press the sesame down with your palm so it sticks to the pastry better. The thin strips are like crunchy pretzel sticks, only they break more easily. You can serve them with creamy tomato soup or snack on them with black tea. Once they have cooled completely, keep them in a sealed container in the fridge for up to 3 days; the puff pastry gradually softens and loses its crunch.
Frequently asked questions
Why did they bake unevenly?
If your oven browns more on one side, turn the tray around after 8 minutes.
What should I do if they are still soft in the middle?
Leave the tray in the oven for another 2-3 minutes, until they are golden on the underside too.
Can I replace the Parmesan with another hard cheese?
Yes, use 100 g finely grated pecorino instead of Parmesan.
