Once the filling is well mixed, set it aside to allow the flavors to blend. Dough: In another bowl, start kneading a smooth, elastic, and non-sticky dough using flour, vinegar, salt, and warm water. It is essential that the water is warm to activate the gluten in the flour, which will give the dough a perfect texture. After obtaining a homogeneous dough, wrap it in plastic wrap and let it rest for 30 minutes at room temperature. This step will allow the gluten to relax, making it easier to roll out the dough later. On a floured work surface, divide the dough into 10 equal parts. Now, using a rolling pin, roll each piece of dough into round sheets about 20 cm in diameter. Make sure to brush each sheet with melted lard, covering the entire surface. It is important that the sheets are overlapped, and the last sheet should be brushed with a smaller amount of lard to prevent the dough from drying out. Once you are done, cover everything with plastic wrap and let it rest for 15-20 minutes. After this rest, take all the overlapped sheets and start rolling them out with the rolling pin, from the center towards the edges, forming a single large sheet of about 50 cm in diameter. Be careful not to let the dough stick to the rolling pin, so lightly flour it. Trim the edges a little to facilitate the unfolding of the sheets when baking. Place the filling in a circle with a diameter of 25-30 cm, then bring the edges of the dough towards the center, completely covering the filling. Carefully transfer the pie to a round baking dish lined with parchment paper. Brush the surface with a beaten egg yolk mixed with a few drops of water to achieve a golden crust. Place the dish in the preheated oven at 190 degrees Celsius and bake for about 25-30 minutes, or until the pie is nicely browned and evenly baked. After removing the pie from the oven, let it cool on a wire rack. Serve the flaky pie with sliced cheese so you can enjoy each delicious piece.
